TEOH CHEW DUCK


TEOH CHEW DUCK.
(LANGKWAS DUCK)

INGREDIENTS.

1 duck about 1 ½ kilos. Clean and trim off all the fat, cut off the bum, this is where the gland is, this will give off a very strong smell if it is not cut off before cooking.

2’’ ginger
4” langkwas(galangal)
3 star anise
3 cloves
1 piece cinnamon bark

In a bow , mix together 2 teasp. Langkwas powder, 2 teasp. 5 spice powder, pepper, salt and a bit of sugar. Rub this all over the duck and also inside the stomach.
Cut up langkwas ginger and stuff it into the duck together with the spices.

Leave it in the fridge over night.
The next day, melt 3 tablesp sugar in a wok( big enough to cook the duck) roll the duck in the caramel , try to cover all over the skin till it is drown.

Add enough water to cover the duck, add in light soy sauce, dark sauce, salt and sugar. Simmer 2 hours or till duck is soft and the sauce thickens. Spoon out the oil, serve duck whole on a bed of lettuce and chilly sauce.
