SERI MUKA


SERI MUKA.


Seri muka is a sticky rice dessert with a sweet topping. This is also a favourite with the Malaysians and Singaporeans.Often said to be the best if made by the nonyas. The secret is to use fresh coconut cream or‘santan'

It is very easy to make, here is the recipe for seri muka.
For those who have tried it, would know what it taste like.

Soak for 4-5 hours, 11/2 cups of pulot rice. (sticky rice)
Pour onto a tray with 1 teasp. Of salt and enough water to cover the rice, add 2 tabsp. Of coconut cream. Steam on high heat for 20mins.

Remove, use something flat to press the rice firmly down. Prick some holes on the surface, put back to steam.
When you are steaming the rice, make the top.

Beat lightly , 4 small eggs,
½ cup sugar, a pinch of salt.
½ can coconut cream
3 tablesp. plain flour.
½ cup water with a few drops of pandan essence, if you can get fresh pandan leaves pound it to get fresh juice.

Mix well, sieve it, and pour it on top of the rice, steam med. Heat 25 mins , test with a knife, if it comes out clean, then the top is cooked. Cool well before cutting.
