MALAYSIAN ASSAM LAKSA

It is simple to make and enough to feed the whole family. you need ...... 1 packet dried mee hoon, soaked in cold water for 3-4 hrs. 1 large can 'Ayam Brand sardines' or any sardines with tomatoes sauce will do. use 1 large can plain tuna. for those who like to do fresh fish, buy a kilo fish, choose fish that will flake and easy to remove the bones. In a pot of boiling water add, mint, duah kosom(vietnamese mint) lemon grass, ginger, ginger flower, boil 5 mins, add fish, when cooked, remove and let cool, remove bones and set aside. In a clean pot , add stock ( fish, or chicken bones made earlier) Pound or blend , 1/2 bowl small onions, 1/2 clove garlic 1" tumeric, 3 stalks lemon grass 10 red chilies, Fry these in oil, add to stock, add more mint, duah kosom, ginger flower boil 1/2 hr. you can either use assam slices or lemon juice, add to stock. Remove all the herbs, add in the flaked fish, or tuna if using , the sardines, add seasoning. Remove the mee hoon, drain, pour a pot of boiling water, give it a stir and drain. In a bowl put in the meehoon, top with finely sliced cucumber, mint, onion, chilies,duah kosom, ginger flower and pineapple. spoon on the hot soup and serve with wedges of lemon.
