2 DISHES WITH PORRIDGE.

HUM CHOY FRIED WITH BEEF.

IKAN BELIS AND TOW CHEONG.

These 2 dishes are easy and quick to cook, and goes well with plain white porridge.
The first, Beef with Humchoy, you need

1 pk. hum choy
350gms sliced beef, spring onion, chilies, ginger, garlic.
Season the beef with a dash of light soy sauce, sesame oil, chinese wine,a pinch of sugar and 1 1/2 teasp. cornflour.
Wash and slice hum choy.
Slice ginger, chilies and garlic.

In a hot wok, add 3 tablesp. oil, fry the beef quickly and dish up. Add in the humchoy, ginger and garlic, stir well, add 3/4 cup water and simmer 5 mins.
add in the beef, cook for 5 mins, mix well, add in the chilies and spring onions.
You don;t have to thicken this sauce because the cornflour from the beef will thicken as you cook.
Dish up and serve with rice or porridge.

The second dish, Ikan belis and Tow cheong , you need,
3/4 bowl of ikan belis (dried anchovies) deep fried.
2 tablesp. tow cheong
1 sliced big onion, ginger, and garlic.
3 green chilies sliced
Tomatoes

In a wok, fry the onions, ginger, garlic, add in the towcheong, chilies, 1/2 cup water, simmer 5 mins. Add a pinch of sugar, add in the ikan belis, stir and dish up.
Serve with porridge or rice.

Tip.
For the first dish, you can change the meat, you can use fish, chicken, or pork.
For the second dish, you can also use fish or pork, but you must add the green chilies because the green chilies gives this dish that aroma that goes well with the tow cheong.
