JAPANESE HOT POT.

For this hot pot, you need, an electric fry pan or a portable gas burner.
This finely sliced beef, lamb and pork can be bought in most chinese grocary shop, found in the freezer.
Big onions, cut into rings, spring onions, mushroom, and 2 types of veg. more if you like vegs.
1 box tow foo. 1 pk, yam noodles, stock( either use ready made stock or make your own stock)
sake, mirin, soy sauce, oil.
You can use chilly sauce ,fresh egg and soy sauce for dipping.

Fry the onion rings and the tops of the spring onions in oil, add in the stock, 1/2 cup, let it boil, then add in a dash of soy sauce, mirin, sake.

when the stock is boiling, add in another cup and add the meat. Each guest can take what they like from the pan.You can eat rice or the yam noodles with the sauce and cook another lot when this is finished.

CHINESE HERBAL SOUP.

CHINESE HERBAL SOUP.

For this soup, you can buy most of this herbs in a ready pack, but I often buy different types of herbs and mix as I cook. This is a very simple every day soup, good for general health and well being .
What I have on the plate is enough for 4 adults.

You need 1/2 a chicken, chop up.
Herbs on the plate, from top, clockwise.
Red dates, Tong sum, dried scallops, pak kay, yoke chook, fai sun and the in the middle , kay chee.
In a clay pot, fill with 6-7 bowls of water, add all the herbs, except the red berries(kay chee) and the chicken.
Bring to boil, simmer 1 hr. add the chicken boil 10mins. and just before serving add the kay chee for the last 10mins. You won't need any seasoning, all the herbs, chicken and dried scallops will give this soup the clear sweet taste.

Tip.
If you want to use pork bones, put this in to boil together with the herbs. Adding the kay chee last is to give a clear soup, if you add the kaychee early, you may end up with a dark colour soup.
For those who wants it plain, don't add any meat, just boil the herbs with water and drink it as a drink.
All this herbs can be mix around or more of others can be added.
